Hack: 5 Min Vegan Energy Bites!

Hi everyone! Hope everyone has been having a fabulous summer. In the spirit of summer I wanted to share a recipe with you that's perfect for that on-the-go kind of day- whether the beach, a road trip, or an adventure up the mountain. This recipe works perfectly in the cooler, and is the quintessential picnic food. I hope you enjoy Hack: 5 Min Vegan Energy Bites


Ingredients

1 cup old fashioned oats
1/2 cup flax/chia blend
1 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1/4 cup Agave nectar
1/3 cup dark chocolate shavings or chips
1/4 cup toasted coconut (for rolling)
1/2 cup Organic peanut butter or almond butter
1/4 cup any nuts you would like


Let's do this Thang in 5 minutes! It's super simple, quick, and delicious- so you get on with your day and not be slaving over a hot stove! 


1. In a large bowl, measure and pour your oats, salt, spices, nuts, and flax/chia blend. Stir well.



2. Then mix in your wet ingredients, honey or Agave, peanut butter, and also your dark chocolate chunks. Stir well until similar to consistency above.



3. Now we are forming the bites! Pour out your toasted coconut onto a small plate. With your hands, form small balls from your oat mixture, and then delicately roll or lightly toss the bites in the toasted coconut. 

ZOE QUICK TIP:

After forming and tossing three balls, your fingertips will become warm, and it will become much more difficult to form the balls. So, after every third ball, wash your fingers with cold water! It will prevent the mixture from become too sticky to form the delicious 5 min vegan bites!  


4. Now you have beautiful vegan energy bites for a wonderful day out in the sun! If you'd like, place them in the fridge overnight to slightly harden- making it perfect for a plastic-baggy for lunch! Enjoy:)
