Hey everyone! As the summer comes to a close, I wanted to share with y'all a recipe that I LOVE. Like adore. I'm the queen royalle of the vegan breakfast, and conquered the trifecta- the vegan pancake, the vegan french toast, and now The Secret To Amazing Vegan Waffles! Enjoy:)
Ingredients
2 cups spelt flour
1/3 cup seltzer water (the secret)
1/2 tsp. baking soda
1 tsp. baking powder
1/4 cup Agave nectar
2 tablespoon flax seed/chia seed
1 1/2 cup non-dairy milk (I use unsweetened vanilla almond milk)
2 tsp. vanilla
1 tsp. nutmeg
1 tsp. Saigon cinnamon
1/4 tsp. kosher salt
1/4 cup melted coconut oil
Let's Do This THANG
In a small mixing bowl, mix together your dry ingredients, making sure to sift that spelt flour because it can become lumpy at times.In the mixer with a paddle attachment, mix together your wet ingredients. Un-attach the bowl from the machine and let rest for 5 minutes. Slowly in three increments, use the mixer to add your dry ingredients to your wet. Add your seltzer water now.With your waffle press, make sure it is pre-sprayed with canola oil to prevent sticking. Then when hot, ladle your mixture in the center of your waffle press. Shut the lid and follow the instruction of your waffle machine.Then voila! You have perfectly crispy golden brown waffles worthy of a restaurant brunch!
