Hey everyone! As school and college life continues to become more and more busy, I wanted to highlight a super simple, easy recipe that is FOOLPROOF! You literally cannot f**k this recipe up. I made this recently at my job as a chef in a kosher kitchen, and it went over amazingly. Note*: if you want to use coconut oil it works just as well. Add the spices you want to make it your own. Hope you enjoy my fav recipe at the moment: SUPER SIMPLE ROASTED GARLIC AND ROSEMARY POTATOES!
Ingredients
6 Small Red potatoes or yukon gold potatoes, large diced
1/2 cup good olive oil
1 tablespoon rosemary leaves
3 cloves garlic, minced
Salt & Peppper
The Main Event
First place about 4 cups of high heat. Bring to a boil. Add you diced potatoes, similar in size with the skin into the boiling water. Let boil until potatoes are slightly soft and you can pierce it with a fork. In a large bowl, combine your oil, rosemary, garlic, and salt and pepper. Drain your potatoes from the water, then add the potatoes to your oil mixture, coating it evenly. Place your deliciousness onto a large roasting pan, and pace in on 450 for 35-40 minutes, making sure to turn them over once to prevent burning.
